I had an extended stay in Mexico and had an opportunity to enjoy three of the dishes on the menu of this wonderful restaurant.
The anticucho is not on the regular menu but if it appears as a special of the day, you must try it. The seasoning is perfect and it really took me back to Peru.
When I read the menu I really just skipped over the stuffed potato but then the server suggested it one evening and I fell in love. The potato was perfectly cooked and the stuffing could not have been more flavourful. A gorgeous combination of flavours with a stellar savoury broth and very tender meat.
My third meal was the Chabuqa ceviche. It was fresh, bright, tart and paired perfectly with sweet potato to balance the dish.
The servers and owners were fun, friendly, and gracious.
I look forward to my next visit to Vallarta to sample the rest of the menu at Chabuqa.
