Hands down the best torta this American has had in her life. And I’m no slacker when it comes to an excellent sandwich of any origin. The young cook uses perfectly crusty bolillo rolls that are no joke the length of her forearm but twice the girth. She heats up the meat and cheese on the grill, spreads mayonnaise on each cut side of bolillo and grills them, then slides the molten mass of meat and cheese onto the bread before adding slices of pickled jalapeño or squirts of a spicy/sweet red salsa.
We ordered a Texana to share (arrachera, manchego, y tocino con salsa). It was amazingly savory, multi-textural and just oh-so-satisfying. 90 pesos, or just under $5. They also had Cubanas, Hawaiiana, and many other types of irresistible flavor combinations.
