For a fine dining sushi restaurant that has been established since 1976, captured thousands of reviews with a dominance of 5 star ratings, and been blessed with a phenomenal Japanese-style garden and a water pond in the middle of a busy city, the expectation is understandably set at a level that even if it sometimes undershoots, the guests will still be happy. In fact, it was far from that.
The restaurant, instead of focusing on some specific dishes but excelling with them, chose to offer a huge various of dishes: from sushi, sashimi, nigiri, maki (all kinds of raw seafood dishes), to katsudon (rice with deep fried breaded meat), karaage (deep fried), tempura, to fried rice, curry rice, eel rice, rice ball, teriyaki, chazuke, zosui (rice meals), to teppanyaki, hibachi, to hot pot, casserole, and even udon, sopa, and ramen (noodle soups). These are not just some Japanese dishes, these altogether forms the entire Japanese cuisine, and literally there are restaurants that serve only one of these dishes. Even the dessert menu requires multiple visits to try it all.
Take sushi rolls, for example, almost all, if not all, rolls have repeated ingredients, either cucumber, or avocado, or fish roe, and eel sauce, plus the seafood choices which were limited to salmon, tuna, white fish, crab stick, shrimp tempura, and scallop. They indeed assembled the whole sushi menu of the restaurant. But even for the roll itself, there was just too much of rice, and too little of taste. Another instances are fried soft shell crab, and shrimp kushiage (deef fried breaded) appetizers. The crab was fried naked without any batter which are supposed to work as a seal locking the sweetness and the juiciness, and preventing crab eggs and tomalley from dissolving in the deep fried process. As a result, the crab was hard and dry, but not in a crispy way. On the other hand, the deep fried breaded shrimp was just oily and tasteless. Besides, the wasabi was dehydrated and barren that it fell off like sand grain.
Therefore, a dinner in Suehiro did not cure our craving for sushi which forced me to treat myself a sushi meal when we were back to the US.

The worst Japanese food I had in Mexico. It’s a fancy place with poor quality. the sushi was extremely salty, the fish is not fresh and soup taste like soap others I don’t know how to describe.

Very Nice and Fancy place to try out fresh and exotic japanese dishes. The sushi is great as well as the salmon sashimi. You'll find also imported fishes and other exotic dishes like jellyfish salad. They have also a good variety of noddle soups which are delicious as well. There are some vegan options (not so many, but it's mainly dishes with Tofu, just ask the waiter in advance before ordering). The matcha tea is also very fresh and delicious. O recommend to do reservation specially at night because it gets a bit full. There are also some tables where a chef comes and prepares some dishes in front of you, which is all an experience because he plays with the knives and gets the attention from everyone. The prices are a bit high but it's really worth if you want to have a nice and/or romantic dinner.

One of my good friends revealed to me her secret for finding good sushi, "I look at the menu if I see queso philidelphia on the menu I close it and walk out!" She recommended that I give this place a try and I was not disappointed. From the service scenery and sushi that I felt rivaled high end restaurants I used to frequent in the US it was astounding. There is something to be said about enjoying sushi supported by elegantly cooked rice in sight of a magnificent garden enriched with four adorable koi. Thank you.

Suehiro was a great experience, a Japonese restaurant in the heart of Guadalajara. There's a beautiful Japonese garden that separates the bar area from the restaurant. We had a sushi roll to start with, I had to ask for the pickled ginger as it didn't come with it, but they brought it right away. And no Wasabi, instead they have a soya sauce with slice jalapeños, it was different (from what I'm used to) but I liked it. Then we had some chicken fried rice followed by Teriyaki Chicken with vegetables.
Ask for a "mesa plancha" thats where they cook the food in front of you, very entertaining.

Very beautiful interior and outside territory.
Still the taste of the rolls isn’t close to the Japanese ones. Other food is tasty

Waitress was probably new and a bit confused so not very helpful, though she did her best.

Will continue my search for good sushi and rolls in Guadalajara
