An executive chef's
review of Nama Sushi:

Querétaro finally has an authentic Japanese sushi bar.

PROs:
1. The quantity of the Fish is top notch it arrives daily fresh not frozen from Ensenada.
2. The prices for the portion is good. I recomend the o toro sashimi.
3. They use some traditional Japanese techniques which add a lot to the experience.
4. The chef Louis is very friendly and knows how to prepare your order just the way you like it.
5. The decore is simple modern and elegant, with a clean bathroom as well.

Things to improve on :
1. A seperate wall between the kitchen and sushi bar to block view of kitchen and dish washing area.
2. Use much less mayonnaise on your recipes. So many of your dishes are so well balanced in flavor, this is a simple correction.
3. Better quality soy sauce or add a touch of sake and mirin, that's an old school technique. Tamari is a good alternative soy sauce.
4. Larger print on your menus would be very helpful.

Over all a great first experience I highly recommend it. I will return so check back for updates. Queretaro definitely needed a Japanese restaurant like this. They have set a new high bar. They do not put cream cheese in their sushi, a truly authentic decision which I hope other restaurants in Querétaro follow

Excellent cuisine and authentic. The negative reviews are clearly from people who don't know traditional Japanese cuisine. The restaurant is nicely decorated and furnished, the music is just right, and above all the quality of the fish is exceptional. The service is spot on, helpful without being intrusive. Cesar knows his craft and the rest of the team is very attentive. If you want cheap rolls stuffed with cream cheese and chipotle this is not the place for you. Best sushi I have had anywhere in Mexico. Well done.

Everytime I ate Sushi in Mexico, I got really disappointed because they use a lot of Philadelphia. At Nama the serve traditional Japanese sushi, how it is supposed to be.
The fish was fresh and everything was delicious!
