They specialize in huarache. The very friendly owner told us he was born in a local village, then went to Mexico City to be trained in preparing huarache, and then established himself and family in San Cristobal de las Casas, setting up his family-run restaurant. He modified the recipe he had learned, adding some local cream, and other modifications, such as adding any meat in only small pieces mixed with the vegetables rather than as a large piece on top. It was the best huarache we ever had. In fact, I had wanted more than the "large" version (combinada) I got. I think the portion was actually fine, but my appetite grew while eating it. My partner also loved her's, the vegetarian version.
While the location does seem somewhat out of the center, it is in fact just a pleasant seven minute walk from the center. The quite large restaurant is very well laid out with local cultural touches. Service is quick and very responsive to any modifications you may wish in your dish of choice.
Very highly recommended.
