Authentic pulqueria far from the touristy part of town. Yes, the silver haired guy sitting at the back of the same as the guy on there mural. Friendly and patient explanations of the various kinds of pulque - both "Blanco" (i.e. all natural fermented sap from the Maguey cactus) and "Curado" (mixed with fruit or other, usually sweetened as well). Don't be shy to ask for samples ("puedo probar, por favor"), at worst they'll decline politely!
