One of the famous tacos in Mexico are the “Tacos al Pastor”, which I use to have when I was studying in Mexico, more than 40 years ago. You would go to a small an humble restaurant where they would have a similar grill used to prepare Doner Kebab with a vertical burner, but using pork macerated on many spices, chiles and herbs. On top over the grill a pineapple. The cook would take a piece of paper, a corn tortilla, and with a large knife he would cut the pork over the tortilla, finally with a swing of the knife, he could cut a piece of the pineapple, capturing in the air with the tortilla and pork, he would add chipped onions and herbs, placing all on a cheap plastic dish. You could order as many tacos as you wanted. When finished they would count the number of papers where the tortilla was laid, giving the final charge that you would pay in cash.
Today, there are many restaurants that serve tacos, some fancier than the others, being one of the “La Casa del Pastor”, you can order as many as you want, but now instead of papers you have a computer.
To my surprise, they now have “Taco al Pastor Negro” (black), has the same process, but instead of pork they un cow meat (“Arrachera”). It is a highly recommended dish.
